Tapas: Parmesan Eggplant Chips. 1 large eggpant (aubergine), 2 eggs, 250g parmesan cheese (finely grated), 1 cup breadcrumbs, 2 cups olive oil. Set aside the chips and carefully fry in small batches until golden brown. Drain well on paper towels and store in a warm oven until all the eggplant chips have been fried.
