Much ado about nothing. March 21, 2018. 1 1/2 cups arborio rice. 4 cups chicken stock. 1/2 cup white wine. 1 medium shallot (or onion) chopped. 3 tablespoons butter, divided. 1 tablespoon vegetable oil. 1/4 cup parmesan cheese, grated. 1 tablespoon parsley, chopped. 1 dash kosher salt, to taste.
