Makes 2 large loaves. 3 1/3 c. flour. 2 tsp baking soda. 1 1/2 tsp. salt. 1 c vegetable or canola oil. 2 c pumpkin puree. Preheat oven to 350 degrees. Wisk or sift flour, baking soda, salt and spices in a medium bowl, set aside. In another bowl, mix sugar, oil, eggs, water and pumpkin until smooth. Add dry ingredients a little at a time and mix well. Bake for 60 minutes until an inserted knife comes out clean.

Serves 6 - 8. 1 cup mayonnaise (may use "light"). 1 tb cider vinegar. 1/4 tsp. salt. 1/4 tsp. black pepper. 5 cups broccoli florets, cut into bite sized pieces. 3 cups broccoli slaw mix, or cabbage slaw mix. 1/2 cup grated sharp cheddar cheese. 6 slices thick cut bacon bacon. 1/4 cup sunflower kernels. Cook bacon until crisp, drain on paper towels. When slightly cooled, crumble and set aside.

Makes 24 cupcakes (halves easily). 3 sticks butter, at room temperature. 3 eggs, at room temperature. 1 tsp vanilla extract. 1 tsp almond extract. 1 tsp baking powder. 1/2 tsp. baking soda. 1/2 tsp. salt. 1 c sweetened flaked coconut. 1/2 stick butter, melted. 2/3 c brown sugar. 1 c sweetened shredded coconut. 1/2 c chopped pecans or walnuts. Preheat oven to 325 degrees.

Sunday, September 9, 2012. From the kitchen of: Erin Tapken. I enjoy using this marinade on boneless chicken pieces that I cook on the grill. I have also used it with success on flank steak. 1/3 c packed brown sugar. 1/3 c soy sauce. 2 tb vegetable or canola oil. 1/2 tsp. sesame oil. 3 cloves garlic, minced or very finely chopped. 1/2 tsp. cayenne pepper (use more if your family likes it spicy! 1/4 tsp. black pepper. Set aside 1/3 c. of marinade to use later while grilling, or as a sauce.
