Rosemary Focaccia | Pancake-Croissants

Channeling Green Acres' Lisa Douglas one pancake at a time. Fit Girl’s Guide. Rose’s Bread Bible. Rose’s Melting Pot. March 4, 2015. March 4, 2015. I have very definite ideas about how focaccia should look and taste. I’ve grown up on this bread. It’s hard-coded into my memory banks, coloring with fragrant deliciousnesses my memories of visiting Golden Boys Pizza in San Francisco. Order with a San Pellegrino and you have yourself Paradise. So I dutifully made my list and set off with my poor husband in tow.

Kourambiethes | Cooking and Thinking
https://readeatreadpeat.wordpress.com/2015/07/21/kourambiethes
Here’s the photographic evidence of my latest foray into RLB baking :. Big ball of dough. I had some extra almonds, and decided to add them in at the last minute. Little round balls of buttery goodness almost ready for the oven. Now they’re really ready. In deference to the camera, I used a glass to flatten them, instead of my (impeccably clean) fingers. The finished product. My family ate them, but still wanted ice cream for dessert. I’ll chalk it up to our heat wave. July 21, 2015. I was looking in an ...

Proscuitto Ring | Pancake-Croissants

Channeling Green Acres' Lisa Douglas one pancake at a time. Fit Girl’s Guide. Rose’s Bread Bible. Rose’s Melting Pot. July 1, 2015. July 1, 2015. One thing I really enjoy most about Rose’s. Is that there is such variety! Rose’s Proscuitto Ring, a recipe she put together after speaking with the original NY bakery from which she first tasted it, was stuffed full of three kinds of meaty goodness, plus lard and bacon fat (or butter) for good measure. But, in for a penny, right? I decided to dive in to the re...

100% Whole Wheat Walnut Loaf | Cooking and Thinking
https://readeatreadpeat.wordpress.com/2015/08/04/100-whole-wheat-walnut-loaf
100% Whole Wheat Walnut Loaf. Whole wheat bread this week so I don’t have to buy any at the farmers market! And even better, whole wheat bread with nuts! Alan and I have been buying big jugs of mixed roasted nuts at Costco. He adds them to his yogurt and cereal, I add them to salad or sneak handfuls when the mood strikes. Everything is ready, though the gluten is hiding off to the side. First I toasted the walnuts, and ran into an unexpected complication; my 14-year-old, who kept eating them! An exciting...

The Baking Bible’s Kourambiethes for the Alpha Bakers – custard guts

July 21, 2015. July 22, 2015. The Baking Bible’s Kourambiethes for the Alpha Bakers. It’s lovely in here and I hope you are having a great time wherever you are. Well, Rose’s recipe takes much longer to make but is extra delicious! Maybe slightly more delicious than Tessa’s! Now I have two favourite versions. I called on my 12-year old niece and 10-year old nephew to help me make these. What a pleasure cooking with them! No notes this week. We were very obedient and followed the recipe as is. ElderBlueberry Pie | Cooking and Thinking
https://readeatreadpeat.wordpress.com/2015/07/27/elderblueberry-pie
This week’s Baking Bible recipe was for a pie made with elderberries and blueberries. My experience with elderberries to date was in Manischewitz elderberry wine, which, according to their website is bursting with the flavor and aroma of elderberry pie. So now I could verify that claim, right? There was cream, not ice water in the crust. On the whole a very different crust experience. Even the all-blueberry version was tasty, and the crust was fall-apart tender. Not flaky though. I wonder if I wa...I sho...

Red White and Blue | Cooking and Thinking
https://readeatreadpeat.wordpress.com/2015/07/04/red-white-and-blue
Red White and Blue. Way back in November, I signed up to bake recipes from Rose Levy Beranbaum’s latest book, The Baking Bible. I love RLB’s fanatical art-through-science approach to baking, and I thought it would be a good opportunity to lend structure to my experiments in the kitchen. Alas, there were too many cooks in the digital kitchen and I went on a wait list. July 4, 2015. Two countries, one language, related cuisines.
