Tuesday, November 29, 2011. 1 tbsp. vanilla extract. 1 tbsp. honey. 1/4 cup vegan shortening (I used olive oil). 2 cups blanched almond flour. 1 tsp baking soda. Place bananas, eggs, vanilla, honey and shortening in a bowl or food processor. I use a immersion blender in a bowl. I also use olive oil or crushed pineapple in lieu of the shortening. Add in almond flour and baking soda. Pulse together. Pour batter into a 7.5 x 3.5 greased loaf pan. Bake at 350 for 55-65 min on center rack. Paleo on Main Street.

So back on track and I have a really yummy recipe for you. Slice one shallot and two mushrooms. Pour enough olive oil in a pan to coat the bottom. Sautee mushrooms and shallots until soft. While those are cooking toss arugula into a bowl, sprinkle some bacon crumbles and cranberries into your salad. And takes less than 10 min to prepare.
