I recently bought the Thug Kitchen cookbook and came across a recipe for pumpkin chili and given my love of chili I knew I had to try it and I was not disappointed, it was delicious and super easy to make. I made a few minor adjustments and topped mine with avocado, radishes, sunflower seeds, and cornbread. I hope you like it as much as I did. Enjoy and stay warm! Pumpkin Chili (adapted from Thug Kitchen). Serves 4 to 6 people. Author PB and Spinach. 1 yellow onion, chopped. 2 carrots, peeled and chopped.
