Tuesday, January 15, 2013. Beef – 1 kg. Coriander powder -2 tsp. Chilly powder - 1 tsp. Turmeric powder – ¼ tsp. Pepper powder – ¼ tsp. Fennel seeds – ¼ tsp. Crushed garlic – 1 tsp. Chopped ginger -1 tsp. Sliced shallots -7 nos. Lime Juice – 1 or 2 tsp. Fresh coconut(thinly sliced) - optional. Green chillies- - 3(slit). Curry leaves -2 stalks. 2 Cook the marinated beef with little water in the pressure cooker for 15 minutes. 3 If the beef is cooked, drain the excess water. Beauty of nature through my lens.

Sunday, October 9, 2011. Hakka Noodles - 1 packet (200gms). Spring onions - 4(sliced). Beans - ¼ cup (cut). Cabbage – ¾ cup (sliced). Capsicum (bell peppers) – ¾ cup (thinly sliced). Celery - 1(thinly sliced). Bean sprouts – ¾ cup. Garlic cloves 2(finely mince. Soy sauce -1 ½ tbsp (low sodium). Vinegar - 1 tsp (optional). Chilly sauce - 1 or 2 tbsp (optional). Wednesday, October 19, 2011. Bell pepper – ½. Ginger-garlic paste – ½ tsp. Cumin seeds - 1tsp. Red chilly powder- ½ tsp. Salt (or to taste). 1 Heat oil in a pan and season with cumin seeds and curry leaves. 2 Sauté the chopped onion until it turns glassy. Add the chopped bell pepper, ginger garlic paste and sauté till the raw smell goes away. 3 Add the chopped tomatoes along with turmeric, chilly powder and salt, stir for a couple of minutes and then add the shredded parotta and toss for a few minutes.

Tuesday, January 15, 2013. Idli rice – 4 cups. Whole black gram (uzhunnu) – 1 cup. Methi seeds – 2 tsp. Ghee - few spoons. 1 Wash and soak whole black gram, idli rice and methi seeds separately for at least 8 hours in water. 2 Grind black gram with methi seeds first. 3 Once that is ground fine, add idli rice and grind everything into a fine batter. 4 Add salt and keep it overnight in a warm place to ferment. 5 Pour a ladle of the dosa batter on a hot non- stick pan and give it a circular shape. Tuesday, January 15, 2013. Pavaikka (Cut into very small pieces or grated) - 300 gms. Shallots - 8 (diced). Grated coconut - 1/2 cup. Green chillies -3 (cut into pieces). Turmeric powder - 1/4 tsp. Cumin seeds - 1/2 tsp. Mustard seeds - 1 tsp. 2 Coarsely grind the grated coconut, half of the diced shallots, turmeric powder, cumin seeds and green chillies. 3 Add the coarsely ground ingredients and mix in. Close with lid and cook for a minute. Then open the lid, stir and fry for a minute.
