Kaeshi is a soup base, a concentrate that can be stored in the refrigerator for a long time in a tightly sealed glass jar/container. This recipe makes 6 c of concentrated soup base. You add desired amount of water and then add meat, veggies &/or noodles to create your soup. (see Udon recipe for basic idea). You can also use this base for a tempura dipping sauce with a ratio of one cup base to 5 cup water.

Now that I see the photo we probably didn't have much more room than the folks at the pool. I was still happy with the choice because every time a kid splashed my face it was at least a kid I know. She used Pearl Couscous instead of Sabudana (pearled Tapioca) to make khichdi. I thought it was a great idea. No soaking Sabudana overnight or dealing with how much water to add while soaking it (different batches soak differently). Gave it a try and loved it! Pearl couscous - 1/2 pound - Cook following the directions on the package. Turmeric - 1/4 tea spoon.
