2 1/2 cups all purpose flour. 1 2/3 cups sugar. 1 1/4 tsp. baking powder. 1 tsp baking soda. 2/3 cup vegetable oil (or apple sauce). 2/3 cup evaporated milk. 2 cups mashed bananas (about 3-4 medium-sized ones). 1 tsp vanilla extract. Tip: Add 2-3 tsps. lemon juice to prevent banana from browning. Preheat oven to 350° F. Grease and flour a 9 x 13 pan or a muffin pan. Sift together flour, sugar, baking powder, baking soda and salt in a medium bowl. Set aside. Pour into prepared pan. Sweet and Sour Pork.

Sprinkle half of the taco seasoning on 1 side of the pork chops. Use your fingers to press the seasoning down into the pork chops. Flip over. Do the same with the remaining seasoning on the other sides. 2 lb frozen brussel sprouts, completely thawed, and DRY. Ground black pepper to taste.
