2 1/2 cups all purpose flour. 1 2/3 cups sugar. 1 1/4 tsp. baking powder. 1 tsp baking soda. 2/3 cup vegetable oil (or apple sauce). 2/3 cup evaporated milk. 2 cups mashed bananas (about 3-4 medium-sized ones). 1 tsp vanilla extract. Tip: Add 2-3 tsps. lemon juice to prevent banana from browning. Preheat oven to 350° F. Grease and flour a 9 x 13 pan or a muffin pan.
