You can make several batches on a cool day, wrap the disks in plastic and toss it in a zipper bag in the freezer. In honor of our new friends from Inner Visions, the Reggae Band from the U.S. Virgin Islands, who seamlessly connected the West Indies to Maine on a Fine Summer Day in July '06. This recipe blends cold-water Maine lobster with the fiery warmth of the Caribbean Islands. Serves 4 with rice. 2 large Maine lobsters steamed and picked and rough chopped (reserve some cooking water). 1 small yellow onion - diced small. 1 cubanelle pepper - seeded; thinly sliced. 1 scallion - sliced thin.

Sweet and spicy with the best tasting bleu cheese dressing I have ever had. 2 cloves garlic, chopped. 8 teaspoons plus 2 tablespoons ancho chili powder (usually found in mexican food isle but regular chili powder works just fine.). 1/2 cup hot sauce I usually buy the mexican brand it is cheap and really good. You can use frank's or a supermarket brand, I have not noticed a difference. 1/2 cup heavy cream.
