Wednesday, October 20, 2010. 餐廳食評(16) 港島廳 ：精緻粵菜代表之一 v( o )v. 前兩天在Facebook上見EE和小Meg談起港島廳的炸子雞，痕癢，馬上無比膏。 酥皮香甜，包身輕軟，餡料嫩美，好吃！ 充滿蛋香，肉餡軟熟多汁，只嫌餃皮腍了一點；墊底的鮑魚味道鮮濃，口感爽嫩，出色！ 表皮較厚，但沒關係，反正主角是蟹肉，皮厚更能保持餡料的濕潤。 脹卜卜的蟹蓋，包含了澎湃的鮮拆蟹肉，味道鮮甜豐濃，口感細嫩Creamy，大滿足！ 為這個而來，卻有點失望。皮仍然薄，卻沒有上次的香脆；肉依舊醃得美味，質感就未及細嫩，感覺上也偏油。 碟底油漬不少，整體水準也比第一次吃到的遜色，未知這和半隻上有否關係。 這個比起上次也差了丁點。還是充滿蝦醬的鹹香，味道絕對出色，但肥肉都份偏多，瘦肉部份帶爽，只是沒上次的軟熟。 個人十分愛喝清湯，這個雖然沒有多少蟹的味道，但湯頭十分醇美清澈，當肉湯來喝，也喜歡。 如果沒有第一次的比較，這頓飯還是吃得稱心滿意的，大家也必定會再回來。 評分：v( 0 )v. 溫暖，滿有蛋及奶香ʌ...
