Sunday, June 28, 2015. One Pot Tomato and Basil Pasta. As much as I enjoy cooking pastas, I tend to avoid tomato pasta recipes. I've found they almost always turn out too acidic for my taste and lack the fresh flavor of the tomato I love so much. This one-pot recipe is the solution to that problem. The original version of this recipe came from a Martha Stewart Living cookbook. But I tweaked it a pretty good bit. 2 tbs olive oil. 1 medium onion, sliced thin. 4 garlic cloves, diced. 1 cup chicken broth.

Sunday, June 21, 2015. Baked Egg with Zucchini and Ham. A few months ago I picked up Judith Jones' delightful book " The Pleasures of Cooking for One. This is less of a cookbook than a guide to cooking. Her philosophy is to use what you have on hand rather that build a list of ingredients for a recipe. I've had a lot of fun with it. The beauty of it is once you get the hang of the process, you can substitute pretty much whatever you've got on hand to make it work. Here's the current version I'm enjoying.

While it was just five degrees cooler, my run went much much better. Of course a much needed day off probably helped as well. I'm hoping I'm finally over the hump and actually running.
