It was weird to be able to walk right into Brazil, but it was even stranger to realize that we had breakfast in Colombia, lunch in Peru, and an afternoon snack in Brazil! El único riesgo es que me quiero quedar…. Happy Birthday to Me. I have to admit – turning 24 in Pasto was not something that I was exactly looking forward to. I didn’t want to turn 24 (I know it’s not that old, but I was content feeling 23! And I had just moved here to Pasto just a week before! I didn’t know anyone and didn’t have any friends here. I actually forgot it was my birthday for a while, with all the busyness of the move. It turned out to be a wonderful day, though! Gorgeous roses from my dad.

It is one of the few things that I never make “from scratch.” This was to quickly change, especially since I live in Colombia! Ready to eat at Thanksgiving dinner. Makes about 8 servings. This recipe for an awesome buttercream frosting, made completely from scratch! Deliciousness – chocolate cupcakes with Strawberry Buttercream Frosting. Makes about 2 cups. 3 1/2 – 4 cups. A blend of American and Colombian cuisine. December 9, 2013. I made this strawberry syrup to add to some delicious strawberry icing. I made, but I think it would also be delicious on pancakes, ice cream, etc. Makes about 2 cups. Add strawberries, granulated sugar, and water to a medium saucepan and bring to a boil over medium-low heat. Reduce heat and allow to simmer about 10 minutes. Remove from heat and pour into a blender. Blend on high speed for 10 seconds or until smooth. December 9, 2013.

This past weekend, I tried some of the most delicious mangos that I have ever had in my entire life at the Saturday market here in Pasto. I was in awe of the juicy flavor of these amazing fruits, and it inspired me to try to make muffins out of them! Makes about 1 dozen muffins. Diced mango (about one large mango). 3 – 4 teaspoons. Beat the eggs lightly.
