After playing around with a recipe I found for blueberry-chipotle ketchup (on Saveur.com, I think) I ended up creating the following:. 3 1/2 oz espresso. 8 oz dark brown sugar (Get a kitchen scale! Best $25 you'll spend! 1/2 c cider vinegar. 1/2 c lime juice. 1 can of tomato paste (the small kind, I think they're 6 oz.). 1 1/2 oz fresh ginger, minced. 3 finger pinch of kosher salt. 1 t ground cardamom.

Usually I hate it when I lose something I was working on (like a recipe) and have to start over from scratch, but in this case it worked out pretty well. What happened is that a couple months ago or so, I came up with what I thought was the best rice and beans I had ever eaten. Actually, it was. Be able to do it again.
