To prepare this one, the vegetable are cut up and marinated in one zip lock bag, the chicken is marinated in another zip lock bag – the bags are left in the refrigerator for a couple of hours then placed in the pan to cook. Recipe from The Make Ahead Cook Book. We had a really busy afternoon so being able to prepare ahead of time was great.

These are my veges – I substituted regular potatoes for the sweet potatoes because I didn’t have sweet potatoes on hand. I forgot to take a picture after it was all wrapped up and ready to bake. The foil packets were fun to make!

I have been making up samples for my summer camps so that the kids (and their parents) can see what they will be learning in class.
