Here's a simple recipe for a no-cook salsa. 1 - 16oz can of tomatoes. 1 - 15 small/medium vidalia onions (rough chop). 1 large pablano pepper (rough chop). 15 - 2 cups of cilantro leaves (don't pack them down). 2 - 5 chipotle peppers (depending on how hot you want it and be sure to include some of the adobo sauce as well). 2 tbsp extra virgin olive oil. 2 tsp black pepper. The only problem was that we were so busy trying to see everyone we wanted to see and do all we wanted to do that I just didn't take the time to workout after the first two days. Enjoy. 1 14 oz can black beans, rinsed. 1 14 oz can navy beans, rinsed. 1 14 oz can mild chili beans with liquid (kidney beans could be substituted here-be sure to rinse). 1 14 oz can whole kernel corn, drained. 1 28 oz can tomato sauce. 1 small can diced tomatoes with chilies (like Rotel). 1 medium onion, diced. 1-1 1/2 lbs ground beef.
