Paul Ainsworth: bringing the magic of No6 to London. That Number 6 was in our top ten restaurant visits of 2011. For our part, after 2011, we had not intended to do more of our Chef Dinners, but having become involved with The Manna Society. Head Chef John Walton. Alongside our support of the Manna Society, a charity local to us, Paul chose a charity local to him, RNLI Padstow. Beautiful plates from Goodfellows. And two essential chef/kitchen aids: Pacojet from ChefTools. And Thermomix from UK Thermomix.

Bringing it back…Black Forest Gateau. It seems to be that, generally speaking, Black Forest Gateau is regarded as being very 70’s and highly unfashionable. It’s one of those desserts that is always stocked in a supermarket freezer cabinet, all soggy cake and faux cream. Bleurgh. I tend to find that my first port of call when looking for classic recipes is the wonderful Delia Smith, in particular her Complete Cookery Course book. 5 oz/150g caster sugar. For the filling and topping. 2 oz/50g plain chocolate.

I went into this week with new rules:. 1) Fix the kitchen scales and weigh EVERYTHING - I have no concept of portion sizes at all and I need to be more strict. Bad but also not totally depressing. 3) Given that there are going to be bad days, make sure that I over-compensate on good days.
