Texas is known for its barbecue, and I’m sure that I’ll get to that later, but having just been in one of the barbecue capitals of the world, I was relieved to discover that Ruby’s Barbeque (an Austin institution) is also known for its jambalaya. Jambalaya is a cajun dish, a bit like paella, and usually consists of meat, vegetables, rice and stock. Pictured above is a beef and beet dish I had recently at Contra NYC, a restaurant that is quickly becoming my favorite. Everything is meticulously thought out, from the menu that changes daily, to the mind blowing desserts that completely redefine what a dessert can be. All in all, sounds like a perfect restaurant, right? We looked to our sides and saw another table making the same mistake that we had. I began cutting with the correct side and it was honestly the sharpest steak knife I’ve ever used.
