Texas is known for its barbecue, and I’m sure that I’ll get to that later, but having just been in one of the barbecue capitals of the world, I was relieved to discover that Ruby’s Barbeque (an Austin institution) is also known for its jambalaya. Jambalaya is a cajun dish, a bit like paella, and usually consists of meat, vegetables, rice and stock.
