I have made it without the pepper jack cheese and I like it just as much. 1 large jar marinated artichoke hearts in oil, well drained (or 2 small jars). 1-8 oz. cream cheese, softened. 1 C parmesan cheese, shredded. 1/2 C Pepper Jack Cheese, shredded (or regular Jack Cheese). Chop artichokes in food processor.

Lemon Poppy Seed Muffin Tops. 1/2 C butter or margarine, softened. 1-8 oz. lemon yogurt. 2 Tbsp. lemon juice. 1 1/2 tsp. grated lemon peel. 1/4 C poppy seeds. 1/2 tsp. baking soda. 1/4 tsp. salt. Preheat oven to 350 degrees. Cream butter and sugar together for 15 seconds on low, then 30 seconds on medium. Add: eggs, yogurt, lemon juice and lemon peel. Blend on low for 30 seconds. Then medium for 30 seconds, scraping bowl often.

Tuesday, April 3, 2012. Reflections on 40 Days of Juicing. I exclusively juiced for the first 10 days and drank only water ( and chewed on a lot of ice chips). The next 10 days I added a green smoothie that included at times greek yogurt. I also allowed myself protein in the form of eggs or raw peanut butter each day. In October I put myself on a pretty strict budget for our consumable items. $125 a week for grocery/household purchases. $80 a week for gas for our two vehicles and $20 spending money on whatever (this usually spills over into grocery spending or going out to eat.) Sunday, March 7, 2010. Jan and Feb. bring birthday fun to our house. Nathan's now five, and had a spaceship cake for his birthday. I can't believe my baby is 5! Becca's birthday party was cancelled twice, because Nathan had a nasty bout with pneumonia. He's ok now, it was a little scary though, we had 2 trips to the hospital. Becca's doing fantastic, though, much better than I expected! We're finishing the Wizard of Oz, and are looking forward to family movie night for their first showing of it! I am inspired by….
