The recipe I used for these muffins was adapted from this Glazed lemon Bread. 4 tablespoons butter, soft. 3/4 cup granulated sugar (or 1 cup icing sugar). 2 tablespoons fresh lemon zest. 1/2 cup whole milk (or 1/2 cup 1-2% 2 teaspoons white vinegar). 2 tablespoons of vegetable oil. 1/4 cup fresh lemon juice.
