Carrot Sheet Cake with Whipped Cream Cheese Frosting. 3 1/2 cups flour. 2 teaspoons baking soda. 2 teaspoons baking powder. 1 1/2 pounds carrots, washed and ends trimmed (they don't need to be peeled). 1/2 cup butter, softened. 8 ounces cream cheese, softened. 3 3/4 cups powdered sugar. 2/3 cup heavy whipping cream. I took Rayen to Disney on Ice. She chose to wear her "Ci'rella" dress for the occasion. When she was dressed and ready to go, she told me seriously, "I Ci'rella.". But, I made one ridiculous splurge. $18 for a wedge of aged Parmesan. Well, for one, it looked beautiful. I didn't know Parmesan. Could look beautiful until I saw this table stocked with Parmesan. The last time I was in the store. Imported from Italy, aged for over 24 months, a warm, pale yellow. I knew it was just what I needed. And thus, the $18 Parmesan.
