This week my school hosted a Shakespeare festival in honor of the Bard's 446 th. Birthday (April 23rd.) Stuffed Baby Eggplants w/Tomato-Eggplant Sauce. 2 lbs small or baby eggplants. 1/2 lb ground beef. 1 cup chopped parsley. 2 cups beef broth. 1 can tomato sauce (29 oz). 1 can diced tomatoes (15 oz). 1 T tomato paste. 1 cup uncooked white rice. 1 cup fresh parsley, chopped. 1 tea dill weed. 1 medium onion, diced small. 1 clove of garlic, pressed or minced. 2 T olive oil. 2 tea black pepper.
