Mix well and set aside. 1 lb meat mince (lamb/ chicken/ beef/ turkey). 3 - 4 green chillies, finely chopped. 4 cloves of garlic and 1 inch ginger, ground to a paste. 1 large onion, finely chopped. 1/2 tsp turmeric powder. 2 medium sized tomatoes, finely chopped. Salt, to taste. 1/2 tsp garam masala powder. 2 eggs, beaten with a pinch of salt.

Juice of lemon (1/2 lemon). 2 tbsp chopped parsley. 4 cups vegetable stock. 2 tbsp olive oil. 1 1/2 cup risotto rice (arborio). Salt and fresh ground pepper. 3 tbsp fresh grated Parmesan.
