My Journey from At Risk to Healthy Living - 1 pound and 1 day at a time. Wednesday, October 19, 2011. Monday was back to the routine for me and I had a normal eating schedule again. Back to lots of good veggies and protein. Monday dinner was the same as Friday dinner from last week - leftovers (first chance I had to eat them) since I made my pulled brisket. Breakfast - yogurt and cheese for breakfast with some trail mix thrown in there. Lunch - chicken and broccoli and a couple of clementines.

I am still reading and trying to drown myself in health but I know that this is all a work-in-progress. I seem to take one step forward and two steps back. It is so true that we are our own worst enemy, sigh. I am determined to make this life change though and stick with it. Tonight I put canola oil, onion, garlic, arugula and spinach in a pan and cooked it down. It was sooo yummy!
