Chronicling the culinary adventures of a vegan food addict. Thursday, January 13, 2011. What in the World Does a Vegan Eat, Part II,. Well, this might not have been the best week to post my daily diet, but I did warn you that there are almost always curve balls / changes in the plan during the week, and this week is a perfect example. Chronicling the culinary adventures of a vegan food addict. Sunday, March 28, 2010. What a great weekend it's been! I took a vacation day Friday since we were celebrating our anniversary. Friday and Saturday were wonderfully warm, sunny days and I got the raised beds and one of the flower beds bed cleaned out. I planted lettuce and spinach and sowed wildflower seeds. The only down side to the weekend was Kentucky loosing to West Virginia. Peppers I seasoned them with. Not! I woke up to very well-soaked c...

My Kind Diet Journey: About Me

http://mykinddietjourney.blogspot.com/p/about-me.html

My Kind Diet Journey. Becoming Vegan and Losing Weight. Like most Americans, I currently weigh more than I like. I feel like my adult life has been spent on one diet or another. You would think such obsession would have made a difference, but it didn't. I try to be "good", give in and be "bad" and ultimately my self-worth takes a hit each time. Which as many of you know, leads directly to ice cream. So what is the most tasty, satisfying food? Junk food, a steak or ice cream? So here I am. I am a most...

My Kind Diet Journey. Becoming Vegan and Losing Weight. Tuesday, June 1, 2010. I live in the Southwest and spicy food is a staple here. I was feeling like some comfort food, so I made vegan versions of my faves. First I made pinto beans, seasoned with onions, sea salt and cumin. After the onions have started to soften, add 2 tablespoons of flour and cook an additional minute or so, until browned. Then add the defrosted container of green chilies and about 1 cup of water. 1 cup frozen corn, thawed. I made...

My Kind Diet Journey. Becoming Vegan and Losing Weight. Monday, May 31, 2010. This morning was like any other. My husband wanted some hot cereal, so I started it for him. I'm a leftover girl. I prefer not to have to much sweet in the morning. The risotto from last night was calling my name and I thought it would taste just amazing with a baked sweet potato. So while the cereal cooked, I assembled my breakfast. Next thing I knew I was assembling a 2nd leftover plate. The hot cereal went to our Nuggets.

Vegan at Home

Monday, April 9, 2012. No Interesting Food Here. It was made of roasted beets, "Sweet Mustard Tempeh," and raw kale with an orange tahini dressing. Very earthy - not something you would serve to someone who eats "regular" food! I was proud of my kids for trying all the components without complaining (then they ate Cheerios). Still don't really like tempeh, but this was pretty good. I made the citrus roasted tofu from Nava's Vegan Holidays. I liked the glaze but it didn't do much for the tofu. We tried to...
