Vegan 2.0 | Vegan At Home
15 cups of rice flour. 1 tbsp arrowroot flour. 1 tsp xanthan gum. 3/4 tsp baking soda. 1 tbsp chia seeds. 1 tbsp apple cider vinegar. 1/4 cup apple sauce. 1/5 cups of almond milk. Zest of one lemon and 1/2 an orange. 1/2 tsp organic lemon extract. 1/4 tsp of each ground cloves and allspice. Preheat oven to 350 F. Grease a bread pan. Mix wet with a whisk. Add dry and whisk into the wet ingredients.Bake for 30 minutes on convection. Allow to cool, transfer to cooling rack. This entry was posted in recipe.

In November of 2009, I decided to try out this whole vegan thing. It started out as an environmental thing after reading the UN's "Livestock's Long Shadow" report, but quickly I came to appreciate the health, ethical, and philosophical aspects also. I am currently in the Global Studies program at the New School in NYC. This means I study things like urban homelessness, human trafficking, the impact of climate change on third world countries, and the politics behind it all. I am intolerant of intolerance.
