So to welcome the new boys in our life to our house we. sorry I mean I made pizza from scratch this weekend. Well, at least I made the dough. Which I must say was the first time making any bread product from scratch. Not exactly the greatest experience. After the 3rd pizza I got the hang of it. I used the following recipe. Well, this year we added spaghetti sauce to our list of canning attempts. Along with salsa and pickles which we did last year. I just kind of made up a recipe, but I think it will be good over pasta or lasagna, or over chicken with some fresh mozzarella even. We made a huge batch, of course, but there are 2 families eating it, and we like our pasta! 40 lbs canning tomatoes, blanched and peeled. 8 bell peppers, chopped and sautéed until tender. 1 cup olive oil. 6 bulbs of garlic, minced. 30 oz tomato paste.

Busy mom meatball sub. I made a quick meatball sub tonight for dinner. Although I didn't make it all from scratch it was still pretty good for a quick meal. Mozzarella slices (2 per sandwich). Frozen meatballs (or can definetly make fresh if you have enough time, enough to cover each bun). Next time I make this I will add shredded parmasean to the cheeses. Homemade Southwest Chicken Salad. So I love southwest salads in restaurants but don't love the price of having to go out to eat to get them. So, this is my newest version of a southwest chicken salad with homemade tortilla strips and homemade guacamole. Pretty yummy. Chicken (from a Taste of Homes cook book). 4 tsp garlic powder. 2 tsp chili powder. 4 tbls lime juice. Olive oil for cooking. 1/2 package flour tortillas. 4 ripe avocados, chopped. Juice of 2 limes. 1 tsp garlic powder. 2 garlic cloves minced.

Dissolve yeast and sugar in 1/2 cup lukewarm water. Stir in salt and shortening. Add warm milk. Then mix in the flour until smooth. Place dough on lightly floured surface. Place on lightly floured surface and roll out to 1/2 inch thickness. Allow to rest five minutes. Cut with pizza cutter into desired shapes. Serve hot with honey butter or jam.
