Saturday, January 17, 2009. 4 chicken breast halves cut-up. 2 T olive oil. 1- 16oz can crushed or diced tomatoes. 1- 8oz can tomato sauce. 1 t dried oregano crushed. 1 t dried basil. 188; t pepper. 2 cloves minced garlic. In a large pan, cook chicken pieces in oil until done, about 5 minutes. Add all the rest of the ingredients, stir to mix. Cover pan and simmer ½ hour until onion is tender. Serve over hot rice.
