February 23, 2015 · 14:41. Becky’s collard greens. Becky’s not a real person, but these collards are the realest thing i’ve made in a long time. 3 bunches of collards. One onion, finely diced. One strip bacon, cut into chunks. 3 cloves garlic, crushed. 2 tbs apple cider vinegar. 1/3 cup chicken stock. 1/2 tsp red pepper flakes. 1/2 tsp black pepper. Steam or blanch the collards in boiling water. when cool enough to handle cut them halfway down the middle lengthwise, then finely chop. 1 1/4 c almond milk.

But really… if garlic doesn’t turn you on, this may not be the pesto for you. 1 cup chopped garlic scapes. 1/3 cup roughly chopped almonds (you can use pine nuts or walnuts). 1/3 cup grated parmesan or romano cheese. 1/3 cup olive oil. June 17, 2014. Cold yogurt eggplant soup. I first made this soup in montreal last summer. it’s hearty but cool and refreshing, especially with the added mint. the eggplant gives the soup a really nutty flavor, but you have to slice it quite thin to make sure it gets nice and crispy. 1 cup ice cold water. Handful mint, finely chopped. 1/2 tsp each cumin and coriander powder. 1 large cucumber, peeled and finely chopped, or grated. Optional: one clove of garlic, pressed or half garlic scape finely chopped.
