It is the perfect light meal. It is pretty simple. You need a little butter and whatever veggies you have on hand:. Cherry tomatoes (don't cook them too long). First you saute the veggies in butter (start with the ones that take longer like onions and add the tomatoes right before you add the eggs). Links to this post.

You start with taking the Arbol chiles, the amount depends on how spicy you want your salsa. I used 1 1/2. You boil the dried peppers in water until they are plump and soft (10 minutes). A Foodie Girl Cooks. Sunday, June 8, 2014. It doesn't have to be just zucchini, you can do peppers, asparagus, squash and eggplant. It is simple and delicious and great for summer. Slice the zucchini lengthwise, about 1/4 inch thick and place in a gallon size ziplock bag. Drizzle in olive oil. Add salt and pepper. With a garlic press, add 2 cloves of garlic. Sprinkle in some herbs. I like italian seasoning, oregano, basil or herbes de provence. You could even add a little balsamic vinegar if you want.

To kick start our summer, we visited Yellowstone National Park and the Tetons, after an afternoon of seeing Pioneer Trail sites (Martin's Cove, Devil's Gate, Independence Rock Wyoming). We wrapped up the week with a stop in Idaho to see two LDS Temples and visit Grandparents in Cove, Utah. Fun filled week! Typical sibling issues, fatigue and what you'd expect from having multiple ages on the same trip.
