In the kitchen with David P. Offutt - The Gastronomic Gardener. Sunday, December 19, 2010. I am enjoying the process of making sausages. This one is a Nurnberger style bratwurst. It was a little tough to find a recipe. Some called for caraway but checking with a German colleague disabused me of that notion, they all called for beef, veal specifically, but I couldn't find any so I used chuck roast (I had some left over from the Kielbasa adventure). the primary seasoning is marjoram. 25 lbs pork shoulder.

The weather was freezing fog and everything was covered in a thin sheet of ice, so he got to spend his first day and night in the house! This morning I moved him back outside with his mother. Lucy decided to kid on Sat. evening 2/12/2011. She had a set of triplets with no trouble. The problem was, I wasn't here! I was calling a benefit auction for the Rocky Mountain Elk Foundation. Jamie handled the situation with ease. She was checking on Lucy every 30 minutes and still missed the birthing. Goats can be sneaky!

As far as I am concerned there are only 2 good things about snow. 1 It brings moisture. (We need the moisture). 2 It makes great Ice Cream. Poverty Knob Snow Ice Cream. 1 Cup Fresh Goat Milk (You can use store bought milk, but it just isn't as good). 1 Tablespoon Vanilla extract. A pinch of salt. Mix together all ingredients except. The invite to the party said bring an appetizer and a bottle of wine. Wings always go over very well, and they are a snap to make. My only complaint is that they used to be very inexpensive and in the last couple years the price hase risen beyond that of chicken legs. Seem ridiculous to me. Preheat oven to 350F. These are some big wings!
