Well let me tell you it can be done and I'm walking proof - from 40, fat and frumpy to absolutely fabulous AND I HAVE ABS! For the 1st time in my life.EVER! I've been skinnier (according to the bathroom scales) than I am now - but I didn't have abs back then, I still had that annoying spare tyre. So whats that got to do with diamonds? How do I know? I know, what a princess!

Most of all it has taught me that if you really want to achieve something, stay true to yourself and your vision and your goals, trust me, its worth it! So where to from here? Well I've got an amazing holiday to Ecuador lined up in Feb 2012 - I'll be ice climbing on some volcanoes! This is soooo far out of my comfort zone it might as well be on another planet!

I didn't have any of those so I used Basso. 1kg fish cut into 1 1/2inch/4cm cubes. Saturday, July 24, 2010. My all time favourite curry - Saffron Chicken Curry. The real version of this is sooo creamy and luscious its like heaven on a plate! I've modified it so it doesn't have the oodles of double cream, and I've used olive oil instead of butter or ghee and its still very yummy! 1kg chicken thigh fillets, cubed (thighs have better flavour than breast meat). 100 raw unsalted cashew nuts. 4 medium red onions. 75 cm cinnamon stick, flaked (I used 2tsp ground). 4/5 green cardamom pods.

The Easiest Curry Ever - Sri Lankan Chicken Curry. 2 Onions finely sliced. 400g diced chicken breast. 25 cm fresh ginger chopped (I used 1 tsp ground). 1/2 tsp ground Tumeric. 1 tsp chilli powder (I'm a bit of a wuss and only used 1/2). 2 tsp ground garam masala. 1) Heat the oil, add the onions and cook until golden brown, add the ginger, garlic and ground spices. Saturday, July 24, 2010. 500g rump steak - put into blender to mince. 1 onion, chopped coarsely. 2 tsp tomato paste. 1/2 cup red wine (optional). 1) heat some olive oil in a pan, add the onions and garlic, cook until soft. Add the clove, cinnamon, cumin, fry for 1 min. Add the beef cook through. 2) Add the tomato paste, tin of tomatoes, sage, oregano and enough of the stock to cover the meat.
