See the English version. 6個去皮去骨的雞大腿部份, 蔥段(3支),薑片(6片),一個雞湯罐頭 (約兩杯),紹興酒2/3杯. 把雞湯煮開, 放進雞大腿, 蔥段,薑片, 半蒸半煮至剛剛好熟約7-10分鐘,不要蒸煮得過頭.把雞取出,把雞湯放在一個容器裡備用. 等雞和雞湯冷卻後,把紹興酒加入一杯的雞湯裡,混合好,嚐一下,如有必要,可再加些鹽或酒,這是浸泡雞的汁液,它的味道應該和你希望醉雞應該有的味道一樣. 浸泡雞的汁液裡的雞湯和酒的比例約為3:2,酒量隨各人口味,可或多或少的調整.至於浸泡雞的汁液的份量,應視雞的份量而調整,準則是雞塊應該完全浸在汁液裡. 雞的任何部份,有皮或有骨的都可以做成醉雞,不一定要用去皮去骨的雞腿,用雞的什麼部位,完全視各人喜好和健康顧慮而定.訣竅是不要把雞蒸煮得過頭.
