All of them are from "Paleo Comfort Foods" by Julie and Charles Mayfield. I have never seen a cookbook so pretty :) and I absolutely loved everything we had this week. Thank you to Julie and Charles for helping us make this Paleo Challenge a success so far! CrossFit, Paleo, Gratitude and Hope. Sunday, August 5, 2012. Paleo Challenge - Take 3! Tomorrow is the kick-off of our newest Paleo Challenge at CFX. It will last 35 days and this time there's a twist - we're in teams! 40% = Risky (high body fat). 31-40% = Excess fat. 23-30% = Moderately lean. 15-18% = Ultra Lean. As much as I have put it out there, sometimes I wonder if I should have just kept quiet. It's simple, not easy. Cheri's workout log and musings. Thursday, September 29, 2011. Yay, a strength day! I feel like I haven't had one of these in ages. I got to be the demo girl, which started off my warm-up, and then I did one set of 5 @ 65#. 85 to 115 looked good and felt good. At 125 I started losing control of my core alignment, my hips were popping in and out of line, and my weight was shifting all over the place in my feet. But, I powered through and completed the 5 reps. Results: 8:35 @ 105#.

CrossFit, Paleo, Gratitude and Hope. Monday, January 23, 2012. Ham and Egg Cups. These have become a weekly staple in our house because they are so easy, and so tasty! Ham and Egg Cups. 1/2C mushrooms, finely chopped. 1/2C shallots, finely chopped. 1 Preheat oven to 350. 2 Saute shallots and mushrooms in skillet. 4 Spoon the shallots and mushroom mixture into each ham cup. 5 Crack an individual egg into each ham cup. 6 Cook for 15 minutes or until the ham edges are crisp.
