The two beet varieties were colorful and flavorful. And the Walla Wallas were sweet. Using a clean kitchen towel (no worries, even white is fine) put the little guy fresh out of the oven in your hand and peel down the sides. I made just a few changes to this recipe, not because I thought it needed it but because I just can’t seem to stray from the risotto method ingrained in my mind.
