And this week I'm featuring a gentle member of the Allium family that is also the national emblem of Wales - Leeks. The flavour of leek really comes through when they are simply sauteed in butter until they just soften - as they break down they also develop a lovely creamy texture, something you don't get with onions. To round out the tart, I've studded it with nuggets of Tallegio.

Here are the items needed. Juice of one lemon or calamansi. And a glass bottle to shake things up. Add equal parts of juice and olive oil into the glass bottle.
