Epicurean Erin: Roasted Oysters with Bacon and Parmigiano-Reggiano

http://epicureanerin.blogspot.com/2013/02/roasted-oysters-with-bacon-and.html

Epicurean – fond of or adapted to luxury or indulgence in sensual pleasures; having luxurious tastes or habits, esp. in eating and drinking. Tuesday, February 19, 2013. Roasted Oysters with Bacon and Parmigiano-Reggiano. What arrived was a creamy, decadent dish - briny, meaty oysters topped with a garlicky cream sauce and smokey bacon crumbles. We ate lunch on the sunny patio overlooking the river, watching eagles fight over a fish. A nice glass of Chardonnay, and I was in heaven. 1 cup heavy cream.

Epicurean – fond of or adapted to luxury or indulgence in sensual pleasures; having luxurious tastes or habits, esp. in eating and drinking. Wednesday, February 6, 2013. Schweinschmorbraten / German-Style Braised Pork. I've been craving roasted and braised food lately. Perhaps it's the gray, rainy sky and short light of winter. Nothing seems to be more satisfying when it's gloomy than a warm, rich roast with root vegetables. Here's last nights' dinner. 2 slices thick-cut bacon. 1/2 cup red wine. Place a ...

Epicurean – fond of or adapted to luxury or indulgence in sensual pleasures; having luxurious tastes or habits, esp. in eating and drinking. Friday, July 20, 2012. Posted by Chef Erin. Thursday, July 5, 2012. Oh yes, friends, it's true! I have been asked to write a cookbook for Quarry Books. I am stunned, excited, freaked out, thrilled. Mostly, I'm really happy! The working title is Staples From Scratch: How to Make Your Own Kitchen Pantry Essentials. So what's it all about, you ask? I've learned a ton a...

Epicurean – fond of or adapted to luxury or indulgence in sensual pleasures; having luxurious tastes or habits, esp. in eating and drinking. Friday, November 4, 2011. On Wednesday, I got an email asking if I'd like to do a segment on New Day NW.the next day! I thought, what the heck and went for it. Less than 24 hours later I was on KING 5 with Margaret Larson. It was really fun and exciting. Hope you like it. Thanks so much for checking it out. And Thyme-infused Olive Oil. 4 garlic cloves, peeled. I am ...

End of Summer Salad with Corn, Tomatoes and Black Beans. Grab a pint of sweet cherry tomatoes, snack on half, and save the other half for this zesty, colorful salad. Until next year, dear Summer, we'll miss you! End of Summer Salad with Corn, Tomato and Black Beans. 2 tbsp lime juice. 1 tbsp white wine vinegar. 1/4 tsp ground cumin seed.

The Wine Pairing Chef: Sassy, Sexy Sauvignon Blanc

http://winepairingchef.blogspot.com/2010/08/sassy-sexy-sauvignon-blanc.html

The Wine Pairing Chef. Thursday, August 19, 2010. Sassy, Sexy Sauvignon Blanc. Remember when I referenced Karen MacNeil's description of Sauvignon Blanc in " Don't Let Wine Tasting Intimidate You! What I mean by that is that instead of overpowering food, it plays well with it. The best regions in the world for growing Sauvignon Blanc include France's Loire Valley, New Zealand, Australia, Austria, South Africa, Chile, and Northern California. Cooler climates help Sauvignon Blanc retain its green inten...

The Wine Pairing Chef: Mmm...Malbec

http://winepairingchef.blogspot.com/2010/08/mmmmalbec.html

The Wine Pairing Chef. Tuesday, August 10, 2010. If you haven't already read my bio, then you should know my passion in life is food and as an extension of that food and wine. When you drink a wine that pairs perfectly with what you are eating the combination is heavenly - like lying on a blanket with your love under a canopy of stars. Yes, romantic. I think the marriage of food and wine is very romantic. You saw that I suggested pairing the vibrantly herbaceous Chimichurri Sauce. What to look for:.

The Wine Pairing Chef. Saturday, July 10, 2010. Don't Let Wine Tasting Intimidate You! As seen on SheSpeaks.com Special Edition. July 9, 2010. You know what drives me nuts? Wine snobs. Don’t let them intimidate you! I once took a wine class from Karen MacNeil, author of the Wine Bible, and she said that the best thing about wine is that learning about it is “purely hedonistic.” Isn’t that charming? She probably remembers the pleasant experience of that wine to this day. Let’s start by learning the ...

The Wine Pairing Chef. Thursday, November 18, 2010. Talking Turkey About Thanksgiving Wines. Need a little advice before you head to the wine shop this holiday? Here are a few notes to help you sort out the perfect wine for your Thanksgiving celebration. There are several wines that are "gimme's" when it comes to Thanksgiving. That doesn't diminish their appeal or great taste. It just means that you might have already thought of them. So, let's talk about the easy pairings first. Is a delicate, low acid ...
