G is funny about vegetables, as I have heard most kids are. However, he will eat these eggs. This recipe makes enough for the both of us. 1/3 to 1/2 a shallot – sliced thin. Goat cheese – crumbled – the amount it up to you. Salt and pepper to taste. This makes enough for G and I to share. Handful of kale (leafs removed from center rib).
