Winter squash is superior in nutritional value to summer squash, but there are substantial differences among winter squash cultivars. Butternut is the highest in vitamin A, carbohydrate, iron, sodium and potassium, which increase substantially with seed maturity. Hubbard is also superior in nutritive value to many other winter squash cultivars. Keep them out of the refrigerator! Stored in a cool(50-60F), dry place. Most winter squash will keep for a couple of months.

Both the turnip and rutabaga probably originate from Sweden. They are similar in flavor. Store turnips in a plastic bags in the refrigerator and they'll keep for two weeks. Mashed Turnips and Potatoes. 3 medium potatoes (1 lb.). 5-6 young turnips (1 lb.). 1/4 cup milk or buttermilk. 2 Tbsp ranch dressing (optional). 1 1/2 cups grated turnips. 1 Tbsp chopped green pepper. 1 medium onion chopped. 1 tsp garlic salt. 1 Tbsp chopped parsley. 1/4 cup shredded cheese. Turnips in Cheese Sauce. A dash of pepper.

The parsnip is native to the Mediterranean region. Parsnips have been around since prehistoric times and were much used by the ancient Greeks and Romans. Eventually, the potato replaced the parsnip as the filling, high-starch, high-protein vegetable of choice. Store parsnips in a plastic bag in the refrigerator for two to three weeks.
