Vegetarian Cooking With Kayla! Slow Cooker: Barley Risotto With Peas and Leeks. 8 cups fake chicken broth (vegetable is a fine substitute). 2 large leeks- only the white and pale green parts thinly chopped. 2 1/4 cups pearled barley. Approximately 1 tbsp dried thyme (do to taste). 1 3/4 cups frozen green peas. 1 chunk Parmesan cheese freshly grated (canned is fine to substitute). 1 In the slow cooker combine the broth, leeks, barley, frozen peas and thyme. Bundle of green onions thinly sliced – greens only. 2 tbsp oil olive. 1/4 cup soy sauce. 2 tbsp brown sugar. 2-3 tbsp fresh grated ginger (do to taste). 2 tbsp minced garlic. Slow Cooker: Lemon, Dill and Orzo Soup. 10 cups fake chicken broth (highly recommended by vegetable broth can be used). 2 cups orzo (see notes). 1 large sweet onion, chopped. 1-2 large carrots thinly sliced. 2 stalks of celery thinly sliced. Half a package sliced mushrooms broken into pieces (optional). 1 1/2 tblsp fresh oregano. 1 1/2 tblsp dried dill. 1 tblsp minced garlic. 1 1/2 tblsp capers. 1 large lemon zested. Salt and pepper to taste. The capers are super important!
