Why I Went Low-Carb. Why I Went Low-Carb. I had been doing a low-fat, low-calorie diet for as ten years. I have been starving myself on a diet of 1200 calories that did not power my humongous frame, which by all rights would need 3000 calories to sustain my weight. I was eating the required servings of fruits, veggies, and whole-grains and nothing was happening. I was getting much, much fatter. I was hungry. I was tired. This can’t be right! This was mind boggling! For the first few days, I was racked by...

I'm running a marathon. So I guess I'm really doing this…. Bring on the fall! Low Carb Cook
I love camping but I hate cooking over the campfire in the mornings because you are stuck at camp for several hours or have to foul the fire pit with water to put it out before a day long hike. So we traditionally did Oatmeal as that is trivial on a camp stove while you make coffee. Being low carb, regular oatmeal is out, and the instant stuff we used at camp is very much out. But I came up with a fantastic version that works great and non low carbers like as well. 1 tbsp rolled oats. 1/2 tbsp chia seeds.
