Notes from a recipe box. Friday, January 18, 2013. Ham and Eggs Hash-Brown Nests. This one is easy to make and perfect for a brunch. I use ham as the meat here but any thin sliced meat will do. I also love to add sautéed mushrooms in-between the eggs and ham. I used fresh spinach for this recipe but like most of my recipes feel free to use any other fresh greens you like. Enough sliced ham to cover inside the cups of a 6 piece muffin pan. 1 package slice mushrooms. 2 tbs olive oil. 1 bunch fresh spinach.
