Recipes from Angie: July 2014

http://recipesfromangie.blogspot.com/2014_07_01_archive.html

Sunday, July 27, 2014. This recipe is a great way to use up summer produce. It is easy and freezes well. It probably cans well too, but I don't can. Yet. I've adapted it from a larger recipe because it suits me to work in small batches. The recipe was originally four times every ingredient. 1 lb tomatoes (my romas weigh about 2 oz each, so I used 8), diced. 3 jalapenos, diced (deseed if you want less heat). 1/4 tsp. salt. My saucepan might be a little small, but it cooks way down. Saturday, July 26, 2014.

Recipes from Angie: Chicken and kale enchiladas

http://recipesfromangie.blogspot.com/2014/07/chicken-and-kale-enchiladas.html

Monday, July 21, 2014. Chicken and kale enchiladas. I adapted this recipe from Barbells and Bellinis. In fact, I adapted it so much, I needed to rewrite it entirely. I made it with ingredients I had on hand. No guarantee I'll ever be able to repeat! My recipe made an 8x8 pan of enchiladas. Meanwhile, for the top. Smother the enchiladas with sauce. I placed the tomato sauce that I concocted over half the pan and salsa verde over the other half, so that each enchilada is half red, half green. Feeds 4 peopl...

Recipes from Angie: February 2014

http://recipesfromangie.blogspot.com/2014_02_01_archive.html

Sunday, February 16, 2014. A week of recipes. Sara Miller inspired me by posting her family's recipes. For the week. I know she has a great schedule for planning each week by theming her evenings (chicken, beef, pasta, etc.). My plan revolves around our activities. I like leftovers Sunday after church, so I cook accordingly on Saturday. I teach Tuesday and Thursdays, so not only am I tired, I rarely get home in time to prep much of anything. Sausage, carmelized fennel, smashed potato skillet, found here.

Eat What You Have: June 2015

http://toeatwhatyouhave.blogspot.com/2015_06_01_archive.html

Eat What You Have. Periodically, because it's good household management but usually because we're in a budget crunch, I go on a campaign to eat the food that we have. Those items that have gotten pushed to the back of the pantry or freezer. Anyone else have this issue? I consider it the fat corn years intended to supply the lean corn ears (see Genesis, the story of Joseph and Pharaoh), but just like the biblical story, it takes some creative management. Stay off my back. Monday, June 22, 2015. But when I...

Kitchen Window: Where are your accusers

http://mrsellis.blogspot.com/2014/07/where-are-your-accusers.html

When life doesn't make sense, is God enough? Journal: Eating What You Have. Sunday, July 20, 2014. Where are your accusers. It always intrigues me when God asks a question. It can't be because he needs information, as if there is something unknown to him lurking inside of me. In part, questions force us to participate in the conversation, to look for the answer and give our best guess to the Master. Something in us doesn't respond as well to a droning lecture. After all, she was caught in the very act.

I’ve Added Bill Cosby to My Prayers. July 27, 2015. My rape was an out of body experience. Thanksgiving night, 1977, just 18 years old yet I can still see the experience today, sadly, as if it is happening all over again. I watch myself from ‘up there’ and wish I could have the girl I was before that terrible night back again. I’ve added Bill Cosby to my prayers. I pray that, right now, he does the right thing.
