Chargrilled Sponge Cake with Poached Mandarins. 1 cup caster sugar. 4 mandarins, peeled. 8 1/2 inch-thick slices Sponge cake. 1 1/2 tbs butter, melted. 1/2 cup double cream, to serve. Place the syrup over high heat and bring to the boil. Boil, uncovered, without stirring, for 5 minutes or until the liquid reduces by half. It's actually one of my favorite recipes because everything is actually in good proportion so I don't need to cut sugar, or do any other stuffs ;) The cake is also very moist and lemony which is super yummy :P The recipe is also very easy to remember because it's the same measurement for butter, sugar and flour. 1 tsp baking powder.
