Smoked panchetta or bacon, fried crisp and crumbled, for toppping. 4 large galettes (the Internet abounds with recipes I prefer the ones using buckwheat flour only and water instead of milk). 2 shallots, finely chopped. 2 garlic cloves, finely chopped. 500g mushrooms, sliced. 25 g dried porcini, soaked and chopped. 300g kale, roughly chopped.

You can use them instead of or mixed with spinach leaves, and they are great in wok dishes etc. And then there’s this excellent pasta dish:. Pasta (such as penne). 1 tbsp olive oil. 1 onion, chopped.
