Wednesday, April 20, 2011. Maangai Pachadi(Tongue Teasing Mangoes). Raw Mangoes - 2 nos(1 cup diced). Green chilies - 2 nos. Jaggery - 100 gms(1/2 cup grated). Ghee - 2 table spoons. Mustard seeds - 1 tea spoon. Black gram dal - 1 no. Red chilies - 1 nos (Broken into to small bits). Salt - 1 pinch. Asafoitida - 1 pinch. 1 Peel and dice mangoes into small pieces. 2 Slit green chilies into 2. 4 Mash the cooked mangoes and add grated jaggery and salt. 5 Let the whole mixture blend and boil for 3 - 4 mins.

Saturday, February 4, 2012. Carrot Halwa (Gajar ka Halwa). Carrots - 3 cups. Milk - 1 cup. Sugar - 3/4 cup. Ghee - 2 table spoons. Cardamom powder - 1 tea spoon. Cashew nuts - 1 table spoon. 1 Wash, peel and grate carrots. 2 Heat milk and allow it to boil till it becomes half its quantity. 3 Add the carrots and sugar to the milk and bring it to boil. 4 After it starts to boil bring the flame to low and allow it to boil, stirring occasionally. 6 Heat ghee in a kadai and add finey chopped cashews and badams.

Grated Badams - 1 table spoon. 1 Sieve Besan nicely without lumps. 2 Grind sugar to a soft powder. 3 Heat ghee in a kadai and add besan(Kadalai maavu). 4 Keep the flame in low and roast, stirring continuously till besan turns to golden brown colour. 5 Remove from stove and allow it to cool. Wednesday, November 24, 2010. Sugar - 3/4 cup. Ghee - 100 gms. Cashew nuts - 50 gms. Cardamom powder - 2 pinches. Cinnamomum camphora - 1 pinch. 1 Heat the kadai and fry the rava till it turns light pink. 2 Let the rava cool down and make it into powder. 3 Also powder the sugar. 4 Heat 1 table spoon of ghee in a kadai and fry the cashewnuts till golden brown. 5 Now mix the powdered rava, powdered sugar, fried cashewnuts,cardamom powder and the camphara powder. 7 Roll the mixture into small balls.
