Monday, February 28, 2011. A Week's Worth of Good Eating. Two new recipes every week. So I made a resolution with myself to do just that. I was on vacation last week, and was able to test out three new recipes, woo hoo! First up was Spicy Udon Noodles from The Urban Vegan. This was super easy to prepare, and extremely tasty. Monday, May 21, 2012. This was so ridiculously easy to make, I don't know I never thought of it before. French bread baked in the oven with pizza sauce, Daiya, fake pepperoni, black olives, and a sprinkling of Italian seasoning. The pepperoni didn't get crisp, but it still tasted good. Wednesday, March 21, 2012. I'm On a Roll. I cooked again tonight! I know, someone should give me an award. :) Today I tried the Bangkok Street Cart Noodles from the latest issue of VegNews. Wednesday, April 18, 2012. So I was at Trader Joe's this weekend, and there was a giant display of their organic taco shells, along with a handwritten sign suggesting either ground beef or chickpeas for a filling. That got me to thinking . I do love chickpeas . and I do love tacos. I sauteed the chickpeas with onions, tomatoes, black olives, and a generic taco seasoning. Topped with yummy queso, and then green salsa (not pictured). This is the perfect. Thursday, April 12, 2012. I finally read Batwoman #6.

This was an impulse buy which will never happen again. I also purchased the mango flavor. Too sugary and not tasty. Cocoa powder, banana, almond milk, caramel extract, and a dash of pear juice. Giant salad with cucumbers, spinach, cabbage, and red wine vinaigrette. Dipping Popcorn in Tomato Sauce is a really unique idea.

You are what you love. Monday, April 23, 2012. The many uses for a corn tortilla. This is just black beans and corn. Also, it is before I began to grill the tortilla which made it a bit crispy on the outside and tastes phenomenal. A rather large mix of veggies including: roasted red pepper, purple cabbage, broccoli, onion, and black olives. I needed to use up a hummus mixture with green olives so I sauteed some onion and garlic and combined these with the mixture. It's topped off with some hot sauce.

On campus. this is one of the pictures from that day. I went to lunch w. my friend dennis the other day. we went to the house cafe. it is surely a gem. this place has a vegan bakery in its basement and it serves up some incredible hummus & pita chips. i had the salsa avocado wrap w/o cheese. it was delicious! This is just one half of it.

This last little spring cold snap we're having put me in the mood for some nice hearty soup, and I got inspired to update of one of my recipes published in Edible Santa Fe a few years ago. I love to use red cabbage in this filling soup because it's so beautiful, it's high in Vitamin C and antioxidants, and it's available all through the winter. It was delicious, and of course Sergio Salvador. 2 T olive oil.

Serves 2 Prep time: 20 mins Cook time: 20 mins. 2 large courgettes; grated. 1 cube of ginger; peeled and finely grated. 1/2 a green chilli; finely chopped. 3 tbsp of gram flour (besan/chick pea flour). Some oil for frying. 1 Grate the courgette add a teaspoon of salt and leave for 3-5 minutes. Squeeze all of the water from the courgette and transfer to a bowl.
