Doreen's diary of delectable dishes. Tuesday, February 14, 2012. Greek Lemon Rice Soup. 3 c chicken broth. 2 to 3 oz uncooked rice. 3 T lemon juice. In a 2 quart saucepan bring broth to boil. Reduce heat, add rice, simmer 20 minutes. Separately, beat eggs and juice. Stirring constantly add 1 cup of hot broth, a little at a time to the egg and juice mixture. Monday, April 11, 2011. 1 (15 oz) can black beans, undrained. 1 (4 oz) can chopped green chilies or 1/2 cup salsa. 1 cup plain dry bread crumbs. 1 t chili powder. 1 egg, beaten. 1/4 c yellow cornmeal. Mash beans. Stir in chilies (or salsa), bread crumbs, chili powder, and egg. Shape into 6 patties 1/2 inch thick. Coat with cornmeal. Heat oil in skillet on medium heat. Combining it with a fresh loaf of homemade bread makes it a simple yet healthy meal. 4 c chicken broth. 2 c cooked brown rice. 2 carrots, grated or finely chopped. 2 stalks finely chopped celery. 1 c milk or half and half. Parsley or green onion, chopped. 1 Melt butter in a large pot on medium heat. 4 Add rice, carrots, celery, salt, and spices.

I did wake up in the morning and tell Aaron it might be the day our baby was born. I became more skeptical as the day progressed. I called my midwife. Contractions went from 8 mins apart to 3-5 mins apart really quickly. I took a shower (I had been doing yardwork with Sam and he had dumped dirt down my shirt! And we tried to make it to the hospital as fast as we could.

Tuesday, April 10, 2012. 1 1/2 cups finely crushed graham cracker crumbs. 6 TBSP butter, melted. 3 (8 oz) pkg cream cheese, softened. 2 tsp lemon juice. 2 cups sour cream. Preheat oven to 300 degrees. For crust: Thoroughly mix graham cracker crumbs, sugar, and melted butter. Press firmly onto bottom of a 10 inch pie pan or spring form pan; set aside while preparing filling. Cool completely. Refrigerate until ready to serve. Top with desired fruit topping or serve plain.
