Cut up a couple heads of Broccoli. Douse with Olive Oil. Minced Garlic - Costco cheater version. Coarse Salt and Pepper to taste. Roast in the oven on a flat pan for 20 minutes at 400F. Marinade: I used 5 HUGE chicken breasts. in olive oil and a bit of lime juice (or vinegar or lemon juice works to tenderize the meat).1 fresh onion diced, 6 cloves garlic minced, 3 Tbspns Garam Masala. Flip and brown each side. My breasts were so big (hahahaha, All you Mintz ladies know exactly how funny that is!

Wednesday, July 27, 2011. Quinoa Cucumber Mint Salad. I made quinoa this morning for breakfast. slipped it into the kid's oatmeal. so sneaky, I know. they were none the wiser. shh. I made quite a bit though, so when trying to think up an alternative to potatoes/pasta/rice for dinner tonight I thought I would be able to find a quinoa salad that everyone would like.
